Nils Schabert began his hospitality journey whilst studying International Hotel Management & Marketing in his homeland of Austria. After his graduation he spent time traveling throughout Europe gaining experience in the best cocktail establishments before joining the opening team at Severin*s Resort & Spa as Bar Manager. Expanding his experience internationally, he relocated to Australia where he started at LUI Bar under Chef Shannon Bennet of Vue de Monde before transferring to award winning bars PS40 and This Must Be the Place. Continuing on his international adventure, Nils landed in Canada in 2019 where he joined the newly renovated Fairview Bar and Restaurant at Fairmont Chateau Lake Louise as Head Mixologist and Lead Bartender.
In his current role as Manager of Bars and Mixology at Fairmont Chateau Lake Louise, Nils oversees the creative and strategic initiatives of all bar operations at the resort including The Fairview Bar, The Lakeview Bar & Patio, and Alpine Social, as well as the hotel’s bottled cocktail program.
In his personal time, he can be found seeking out new restaurants and bars, and learning about new flavours he can bring to his cocktail creations. Nils was also awarded with the best Overall Beverage List 2019 by Culinaire Magazine for Fairview Bar and Restaurant.
