Using botanicals foraged by the hotel’s bartenders and in collaboration with Wild Life Distillery’s Fairview Gin puts the perfect spin on this savoury sipper. Rimmed with a blend of classic celery salt and red pepper flakes, combine the Fairview Gin with lemon for a touch of sour, a dash of hot sauce and horseradish to add some spice, Worcestershire and traditional Clamato for a savoury finish. 5 Decade Caesar

The Caesar may have celebrated 50 years in 2019 however this down and dirty but oh-so drinkable cocktail from Fairmont Chateau Whistler with each of the five flavour profiles is worth celebrating for the next fifty years. House-made Thai Chili and Orange Percolated Gin comes courtesy of a cold drip system and a ten-hour timespan. Then combining the gin with vodka, traditional Clamato juice is added for some saltiness while vine ripened BC tomatoes balance with bitterness. A dash of both balsamic vinaigrette and miso add sour and umami respectively, and a splash of Burrowing Owl’s Coruja hits the sweet spot. Mountain Caesar

This classic, Canadian, mountain-sized Caesar is the most sought after Signature Cocktail in Fairmont Jasper Park Lodge’s Emerald Lounge. Sticking with the traditional recipe that everyone knows and loves, this famous Caesar consists of Finlandia Vodka, Tabasco sauce, Worcestershire, freshly shaved horseradish and of course, Clamato. Rimmed with celery salt and garnished with beef jerky, celery, pickled asparagus, lemon, lime, olive and onion, it’s hard not to become intrigued by this lavish looking drink.
