Rhubarb Gimlet, A Summer Cocktail

Imagine yourself sitting on the sparkling shores of Lake Louise. After a day filled with traversing trails and paddling pristine waters, you sit back and relax, cocktail in hand. What better way to reminisce on the day’s adventures and create plans for tomorrow than over a light, fresh, refreshing drink? Louiza’s Rhubarb Gimlet, created by Regional Manager of Bars and Mixology, Sam Clark, uses Canmore based Wild Life Distillery gin for a truly local recipe. Rhubarb and strawberries conjure memories of simple summers past, tingling your taste buds with every sip. This is the perfect summer sipper for reliving sun-filled memories.

Recipe | Makes 1 Cocktail

  • 2 oz. WLD Rhubarb Gin
  • 1 oz. freshly squeezed lemon juice
  • ¾ oz. simple syrup (simmer equal parts sugar and water)
  • 2 dashes Rhubarb Bitters (Sam loves to use Dillions rhubarb bitters but others will work just as well!)

Method

  1. Measure all ingredients into your cocktail shaker.
  2. Fill with ice and shake well for at least 15 seconds.
  3. Strain through a mesh strainer into a Nick and Nora glass or a Coupe
  4. Garnish with a fresh rosemary sprig. Enjoy.

Sam’s top tip:
Give this and autumnal twist and infuse your simple syrup with your favourite herb. Rosemary or sage work perfectly!
