Fairview is our acclaimed fine dining venue serving contemporary, colorful Rocky Mountain wild-inspired cuisine. Executive Chef Jean-Francois Fortin collaborates closely with the area’s best farmers, ranchers and foragers to create an evolving selection of seasonal dishes.
