Fairmont Chateau Lake Louise Launches Signature Whisky

LAKE LOUISE, AB, November 18, 2021– Today Fairmont Chateau Lake Louise announced the launch of a signature whisky made exclusively for, and available only at, the resort. Aptly named “Untamed”, the whisky represents the wild area that envelopes Lake Louise and the Chateau within Banff National Park.

Nils Schabert, regional manager of mixology for Fairmont Hotels & Resorts in Canada’s Western Mountain Region, created this whisky in partnership with Park Distillery in Banff. It is 100 percent Canadian Rye and is the only whisky to be aged in Banff National Park. The process commenced with Schabert tasting all eight barrels of raw 75 percent proof whisky already aged at the distillery and after selecting the perfect barrel, he began the process of diluting it down to 45 percent proof of the final product.

“We use water to dilute the raw whisky. It comes from six glaciers high in the Canadian Rocky Mountains,” stated Schabert. “It gains minerality as it travels down the Bow River, past us here at Fairmont Chateau Lake Louise down to Park Distillery in Banff.”

 

Untamed signature whisky smells of candied orange rind with subtle notes of dark chocolate, black pepper and overripe plum on the nose while bringing a flavour of cinnamon spice and wildflower honey with green fennel and crabapple to the palate. Schabert describes the finish as leather and tobacco leaf with a strong lasting choke cherry mulled wine.

Best paired with steak, charcuterie or dark chocolate, Untamed is sold exclusively at Fairmont Chateau Lake Louise, either as a dram or in three unique cocktails at Alpine Social and Fairview Bar.

Schabert is no stranger to the cocktail and spirit scene. Earlier this year, Foodservice and Hospitality Magazine named him as a recipient of its Top 30 Under 30 award and in 2019, he was awarded with the best Overall Beverage List 2019 by Culinaire Magazine for Fairview Bar and Restaurant. In spring of 2021, Schabert led the development of Fairmont Hotels & Resorts’ signature bottled cocktail offering.
